Lesson of the Day #16 - Appalachian Gap Distillery

A biochemist and a chef walk into a bar…then they decide to open a distillery of course!

When friends and fellow home brewers decided to take a class in distilling one weekend in 2010, it set them on a path that led to opening their own distillery.

Today they are handcrafting their spirits (whisky, rum, tequila, gin etc.) with the finest ingredients that are balanced, rich in flavor, utterly unique.

Besides being passionate about their liquor, they are passionate about sustainability. Their facility is super insulated, entirely powered by their solar array and stillage and waste grains are given to local farms.

Trivia: All distilled spirits start off clear. Coloring comes most often comes from aging in oak barrels.
